Famous for its huge round holes, Emmental is a deep, golden yellow Swiss cheese with a smooth firm texture and a mellow sweet flavour, with a hint of hazelnuts. It is made from cow's milk and ripened for at least four months in a wheel weighing up to 100kg, before being cut into portions. The best quality will have the word ‘Switzerland' stamped on the rind. Emmental keeps well and is excellent for cooking as it melts evenly and turns perfectly golden when grilled. Its flavour enhances rather than overpowers other flavours.
Emmental is particularly good mixed with Gruyere to make a cheese fondue.
