An aromatic mixture of spices widely used in Indian curry recipes. Garam masala is made from cardamom, cinnamon, cumin, cloves, peppercorns and nutmeg, though there are many regional variations.
Ready-made garam masala is widely available, but it is possible to make your own in a coffee grinder or spice mill.
To make your own, grind 1 tbsp cardamom seeds with 5cm piece of cinnamon stick, 1 tsp cumin seeds, 1 tsp cloves, 1 tsp black peppercorns and a generous pinch of nutmeg. This will make 3 tbsp of spice, keep in a screw top jar and use as required.
