A delightfully fragrant fruit, the lychee is a small round fruit with a pinkish, thick leathery shell. Inside is a small, white, translucent fruit with a large, inedible brown stone. The flesh has a delicately scented grape-like texture.
All year round from Madagascar, South Africa, the Far East, Spain and Israel, including canned lychees in sweetened syrup.
How to prepare
Press the shell between your finger and thumb and peel away the skin. Cut the flesh and remove the stone, serve as they are at the end of a Thai meal, in light sugar syrup or in a chilled tropical fruit salad.
