These long, slender onions are about the thickness of a pencil but can grow to the size of small leeks. They have a mild flavour, and are often used to give crunch in salads and stir-fries or as a flavouring in Thai and Chinese recipes.

The thinner the spring onion, the milder the flavour. Choose fresh, bright green, unwilted leaves.

Trim off the roots and slice the onions. The white part has a sweet flavour while the green part is more chive-like and can be finely chopped and used in salads. Use in stir fries, scatter over fish with ginger and soy sauce, or cook on a griddle pan to serve as a side vegetable. Try this delicious spring onion pancake recipe.
