A classic salad dressing made from a mixture of vinegar and oil, flavoured with herbs or spices and used to drizzle over salad recipes. The classic proportions are 3 parts oil to one part vinegar but the flavour can be varied depending on the ingredients used. Olive oil gives a rich taste, but lighter flavoured oils and nut oils also work well, use fruit vinegars if liked and add 1-2 drops of balsamic vinegar for richness.
How to make a vinaigrette
2 tbsp vinegar or 11/2tbsp lemon juice
Salt and black pepper
2 tsp Dijon mustard
6 tbsp oil
In a small bowl whisk the vinegar or lemon juice with the salt, pepper and mustard, then very gradually whisk in the oil to make a thick emulsion. The mixture can be stored for one week in a screw top jar.

Shallot vinaigrette Add very finely chopped shallots, ideal to serve with meat and root vegetables
