Zesting hero

Orange, lemon or lime zest is full of essential oils that gives the fruit its distinctive flavour. Zest is the outer coloured layer of citrus peel and should not contain the white bitter layer underneath. The easiest way to remove zest is with a small serrated zester, which peels it away in long thin strips, but you can also use the fine zesting blade of a grater or pare off very thin strips of citrus peel with a potato peeler and then cut it into fine strips.
