Mushroom varieties

1. Shiitake
Available: All year round (British)
Team with miso, spring onion, chicken and eggs.
Try slicing shiitake mushrooms and gently sautéeing in a little oil until they are softened. Beat some eggs and season, then add the mushrooms and some chopped chives and cook over a low heat, stirring until the eggs are scrambled to your liking.

2. Oyster
Available: All year round (British)
Team with soy sauce, coriander and seafood.
Try stir-frying oyster mushrooms with spring onions and prawns that have been marinated in fresh chopped coriander, crushed garlic, soy sauce and sweet chilli sauce.

3. Wild
Available: October to February
Team with pasta, creamy sauces, parsley and bacon.
Try sautéeing sliced wild mushrooms with finely chopped garlic and sliced onions in a little oil. Bake a sheet of ready-rolled puff pastry, until golden, then scatter over some grated Gruyère cheese, top with the onions and mushrooms and bake for a further 5 minutes. Meet the grower
Mushroom expert John Dorrian knows a good fungus when he sees one. For the past 18 years, he has worked for Smithy Mushrooms in West Lancashire, cultivating and collecting a range of tasty specimens that are sold in Tesco. Smithy Mushrooms grows up to four tons of shiitake and six tons of oyster mushrooms every week on their three-acre farm.

What types of mushroom do you supply to Tesco?
‘We grow a wide range of exotic mushrooms, including shiitake, pink and yellow oyster mushrooms, king oyster mushrooms and black poplar mushrooms.'

How should mushrooms be stored at home?
‘To keep them at their best, you should ideally remove them from any plastic packaging and store them in the fridge in a brown paper bag.'

What's the best way to enjoy them?
‘Don't just fry mushrooms for breakfast — they're great in sauces and soups, and they go well with lots of meat and fish dishes.'
