Salt the salmon fillets and place these under a hot grill to cook for approx 10 mins. Turn the fillets halfway through cooking time.
Place the bag of rice in a pan of boiling water and simmer for 10 minutes
Slice the peppers, onions and mushrooms and fry these in the olive oil for 7 or 8 minutes.
Break the salmon into bite sized pieces with a fork. Drain the boiled rice, carefully open the bag and tip the rice into the pan with the peppers, mushroom & onion. Stir to mix the ingredients well. Add the salmon flakes and stir gently.
Serve & enjoy!
This is a really simple recipe. I grill the salmon well and possibly over cook it for some people's taste so keep an eye on the salmon and only cook until you are happy with it.
