First fry the finely chopped onion. Mix the fried onion, leftover vegetables, beaten egg, diced ham with the leftover mashed potato and season well.
Heat some oil in a frying pan and take a spoonful of mash mix at a time, and shape into a burger-sized pattie, and drop into the hot oil to fry for approx 5 minutes. Remove pattie from the oil when browned.
Tips: If shallow frying, remember to carefully turn the pattie over to cook each side. Serve with brown sauce. Ingredients can be varied to include whatever is left over - such as chicken, lamb, pork, diced carrot, cheese, stuffing, etc.
