So easy to transport, I often bring them to breakfast meetings at work, everyone turns up!
Have a large non stick frying pan on the heat and place one Tortilla in it. Sprinkle the red leicester over the tortilla and arrange the tomato evenly over this. Season with salt and pepper.
Place the havarti on top, ensuring even distribution, you may have to tear and patch the cheese. Next, pop the other tortilla on top and press down. Keep checking the underside but after around 3 minutes it should be flipped.
Cook the other side for 2-3 minutes and by this time the tortilla should be golden and the cheese melted. Allow to cool slightly and cut into wedges.
Try combinations of your favourite cheese, it's just that I like these for their flavour and melting properties.
