Preheat oven to 350 degrees F. Spray an 8 inch casserole dish with cooking spray
Chop garlic and onion. Grate courgettes.
In a large saucepan sprayed with cooking spray, sauté the courgettes, onion, garlic, mixed herbs and a dash of black pepper until tender (approx. 8-10 min). Take off heat and let cool.
In a bowl, combine the egg whites, egg, butter milk and Tobasco. Beat well. Add egg mixture to vegetables, mix and pour into casserole dish.
Bake for 35 to 40 minutes until eggs are puffy and set.
