I love healthy eating and Italian holidays...I invented this recipe as a combination of the two!
Chop the onions and fry in a little olive oil. Add the chopped tomatoes and heat gently.
At the same time,boil the pasta in a separate saucepan,according to pack instructions.
Drain the pasta,return to the pan and add cooked onions/tomato. Over low heat,add tuna and herbs.
Pour boiling water on the spinach and cook for only 1-2 mins.
Serve pasta on warmed plates with spinach as a side. Mmmm....
Add a little sugar when frying onions to caramelise.Top pasta just before serving with few uncooked spinach leaves,fresh herbs,1 or 2 red onion rings and sliced tomato...looks good!
