This recipe was given to me by an African friend. It is so delicous that it is good for street party as well as any dinner party.
Remove all the meat from the chicken and cut the meat into small pieces.
Heat the sunflower oil in a pan. Add in garlic and onion and sweat for 5 minutes. Add in the curry paste and fry for 2-3 minutes.
Add in chicken, cardomoms, carrot, tomato and chilli sauce, chopped tomatoes and cook for 5 minute.
Cover and leave to simmer for 45 minutes till the chicken is tender and tha sauce is thicken.
Garnish with chopped green chilli. Serve with freshly cook rice.
Simmer the chicken as gently as possible.
