Afternoon tea Quick spiced tea cookies 0004 (h)

These may be called afternoon tea biscuits but you'll want to keep them handy for a snack any time of day. Spiced rather than overly sweet, they are not only satisfying but a real pick-me-up.

Preheat the oven to gas 6, 200°C, fan 180°C.

Beat together the sugar and butter until pale and fluffy. Add the egg and beat well. Sift in the flour, salt, spices and sultanas and beat together.

Line one or two baking sheets with nonstick baking paper and place small spoonfuls of the mixture well spaced apart on the baking sheet and bake for 8 minutes or until just golden.

Remove from the oven with a spatula and serve while still warm.
