Preheat the oven to 190°C/375°F/Gas mark 5.
Line 4 tartlet tins with the pastry and leave to cool in the fridge whilst you make the filling.
Place the ground almonds, sugar and lemon rind in a bowl, then pour in the melted butter brandy and cream and mix well.
Whisk the egg white then fold into the almond mixture. Spoon the mixture into the pastry cases.
Bake for 30 minutes.
