American Blueberry Pancakes recipe

American Blueberry Pancakes

I love eating American pancakes for a weekend breakfast.

Mix the flour, pinch of salt and baking powder in a large bowl.

Beat the egg and milk together, then whisk into the flour mix until you have a smooth batter. Then stir in the melted butter and blueberries.

Heat a large frying pan with either oil or butter to cook the pancakes.

Use a laddle to put some of the pancake mixture into the frying pan, cooking 3-4 in one go ( depending on size of frying pan).

Leave to cook for 2-3 mins until you see bubbles on the surface of the pancakes, flip them over and cook for another 2-3 mins until golden brown.

Serve immediately with golden or maple syrup. Enjoy!

I enjoy having some butter spread onto my pancakes with the syrup lightly drizzled over for extra yumminess!
