I grew up in Canada and always loved having pancakes at my grandmother's house. When I moved to England I really missed them and decided to find a recipe to make my own. I found a simple recipe and have altered it through the years. Now it is finally just right!
Sieve the flour into a mixing bowl. Add the sugar, baking powder and bicarbonate soda. Mix together.
Make a dip in the flour mix, add the beaten eggs, melted butter and milk. Mix well until all lumps are gone.
Preheat some oil a frying pan on a low-medium heat.
Add some of the batter to make a pancake. When it has several bubbles on top it's ready to be flipped. Cook other side for just over one minute.
Serve with a dab of butter and maple syrup.
