Apple  and Jam Pancakes

I like making pancake with kids. This is one of the ways of getting children to eat fruit.

Mix sugar and apple together. Set aside.

Place flour and salt in a bowl. Add in the beaten egg. Gradually beat in the milk with a wooden spoon till the batter is smooth.

Heat some oil in a frying pan (18cm.) Put a ladle of batter in the pan. Allow the batter to thinly coat the base of the pan. Cook for I minute and turn the pancake over to cook the other side.

Transfer the pancake onto a plate. Arrange the apple slices in the centre of the pancake and fold into quarter. Spoon some jam on top and serve.

Other fruit can also be used like strawberries, plums or pears.
