Apple and pork maple stew recipe

Heat a large frying pan with a tiny amount of oil and fry the pork until it is quite well browned. This can be achieved quicker by adding a little sugar. Do not overcrowd the pan,you don't want the pork to stew.

Put the browned meat into a casserole dish and start frying the onions. When they are nicely browned add the tinned tomatoes and the maple syrup. Season with salt and add to the casserole, mix well and add a little water so the juices cover the meat.

Cook in a medium oven for 90 minutes, checking that it does not dry out.

Peel the apples, core and chop into fairly thick slices, add to the casserole and cook on for another 30 minutes.
Stir well and check the seasoning before you serve adding salt or maple syrup until you get the desired taste.

Serve with boiled rice, I like to mix a little Wild rice to the basmati for a different texture.
