Pre-heat the oven to Gas 7, 220ºC, fan 200ºC and line a 33x35cm baking tin.
Break the eggs into a large bowl and add the sugar and oil. Mix together until smooth and all the ingredients are well combined. Peel, core and dice the apples then add them to the bowl. Stir until they are coated with the mixture.
Sieve the flour and baking powder together into the bowl and stir until no lumps of flour remain. Finally, stir in the chopped nuts, pour the mixture into the prepared baking tin and place it in the oven.
Bake for 25-35 minutes until the top is golden and risen and a skewer inserted into the cake comes out clean.
