Simmer the apples with the sugar, lemon zest and 25g of the butter, until soft. Let the mixture cool.

Melt the remaining butter and mix with the crushed ginger nuts, then layer with the apple mixture into glasses.

Top with crème fraîche swirled with lemon curd, you can use shop bought lemon curd or check out our recipe here.
