Apple pear and walnut salad HERO

Toss the apple and pear in the lemon juice and set aside.

Whisk all the dressing ingredients in a bowl and season to taste.

Put all the salad ingredients, except the beetroot, in a bowl. Pour over the dressing and scatter over the beetroot.

  • 100g (3½oz) baby spinach
  • 300g (10oz) feta, crumbled
  • 50g (2oz) walnut halves, toasted and chopped
  • 2 cooked beetroot, cut into matchsticks
  • 1 tbsp hazelnut or walnut oil
  • 2 tbsp white wine vinegar
  • ½ tsp thyme leaves
  • ½ garlic clove, crushed
