Toss the apple with the lemon juice straight after cutting it to prevent browning. Spread one side of the bread slices with the mayonnaise.

Lay two of the bread slices out on a board, mayonnaise-sides up. Divide the turkey, apple and cheese between the bread. Scatter with a little black pepper, if using, and top with the remaining bread, mayonnaise-sides down. Cut each sandwich into four squares, stack them up on top of each other and wrap each stack of four well before packing into a lunchbox.

Tip: If the cut sandwiches aren’t holding together firmly, and your children are old enough, spear each through the middle with a cocktail stick.
