Bring a large saucepan of water to the boil and cook the pumpkin until soft; 15-20 minutes usually. Drain and puree in a food processor, then add the butter and a little seasoning and blitz again until smooth. Transfer to a storage jar, cover tightly and chill.

Cook the peas in a large saucepan of boiling water for 8-10 minutes. Drain and refresh in iced water. Puree with the butter and a little seasoning in a food processor until smooth. Transfer to a storage jar, cover tightly and chill.

Cook the broccoli florets in a large saucepan of boiling water for 3-4 minutes until tender. Drain and reserve the cooking liquor. Puree the florets (leaving a small cooked floret to garnish) with a little of the cooking liquor and a little seasoning until smooth. Transfer to a storage jar, cover tightly and chill.

Boil the carrots in a large saucepan of water until tender; usually 14-16 minutes. Drain and transfer to a food processor, then add the butter and a little seasoning. Pulse until it forms a thick puree. Transfer to a storage jar and chill.

Serve the puree warm or cold in serving cups.

Garnish the broccoli puree with a small cooked floret of broccoli, garnish the carrot puree with a coriander leaf, garnish the pumpkin puree with the crushed cumin seeds and garnish the pea puree with small mint leaves.
