Aubergine Pasta with Goats Cheese recipe

I was given the opportunity to try Tesco Finest dried pasta for free. I wanted to make a good meal to do it justice and this was what I came up with!

Dice the red onion and slice the Aubergine into 1cm slices. Heat up some olive oil in a large frying pan. Add the onions and the lazy garlic and fry until the onions are soft and translucent. Then add the sliced aubergine to the pan and stir. At this point, add enough boiling water to cover the pasta and heat it until simmering. Now the aubergines should be soft, add the tin of tomatoes to the frying pan of vegetables and stir until the pasta is cooked. Drain the pasta and add it to the pan containing the sauce, along with a big handful of fresh basil. Stir together and serve. Crumble the goats cheese over the top and done!

This meal is suitable for vegetarians and could easily be made vegan by removing the cheese and replacing the pasta with a gluten-free version.
