I got to try some of the vegetables used in this recipe (sweet potatoes and avocados) for less as part of the Orchard at Tesco programme.
Preheat the oven to 350 degrees F (175 degrees C). Place the sweet potatoes on a baking sheet.
Mix together the red pepper, avocado, olive oil, onions, cumin and lime juice in a bowl.
Cut the sweet potatoes in half lengthwise, and fluff the centres with a fork. Top with the avocado stuffing. Season with salt and pepper, and top with the grated Cheddar cheese.
