Pour the olive oil into a medium frying pan. Add the onion and cook over low heat until transparent.
Add the peppers, mushrooms and bacon and continue cooking until the peppers are soft, stirring often.
Stir in the chorizo and tomatoes and bring to a boil. Remove from the heat.
Preheat the oven to 180C.
Bring a large pan of salted water to the boil. Cook the pasta until it is almost tender, about 2 minutes before the recommended time on the packet. Drain and turn the pasta into a baking dish.
Mix in the meat and vegetable sauce. Stir in half of the diced mozzarella. Season with salt and pepper to taste. Top with the remaining mozzarella and the grated cheese. Bake until the top is bubbling, about 20 minutes. Serve with garlic bread and a side salad.
