It's a bit of everything we like! It's a winner with all of us and very filling. Great for when you have eggs you need to use up.
Put pasta onto cook
Dice up bacon and put on to cook
Dice up shallots and celery and cut tomatoes into quarter and add to the pan with the bacon and stir
Mix the eggs with the butter, milk, salt and pepper and half of the cheese then whisk for 30seconds. Make sure you keep an eye on the pan so the bacon etc doesn't burn!
Once the pasta has cooked, add a little more oil to the frying pan then add the egg mixture
Quickly drain the pasta and add to the frying pan stirring carefully
Cook until eggs have cooked through. Add the left over cheese onto the top and serve!
You'll need a large frying pan!
