Warm a tablespoon of oil in a pot.
Fry the chopped onion, celery and carrots for 5 minutes.
Add the paprika and the stock cubes and stir.
Add the lentils and a litre of boiling water. Cover and simmer for 10 minutes.
Add the finely chopped parsley and pieces of cooked bacon. Simmer for a further 10 minutes.
I usually double or triple the ingredients and freeze any extra.
