Heat the oil in a large frying pan then add the bacon lardons and fry for a few minutes.
Add the diced potato.
Cook on a medium heat until potatos have gone slightly translucent
Add the Onion.
Crush the garlic in to mix and stir well. Add seasoning to taste.
Reduce the heat to ensure the poato is cooked through
Either fry or poach eggs, if you like.
Serve the potato mix piled on a plate and lay the cooked eggs on top.
Make sure the egg yolk is still runny and pierce it when serving to allow the yolk to run over the potato and bacon.
