This simple, salty bacon crumb topping is the perfect way to add some texture and flavour to a variety of different dishes.

Preheat the oven to gas 4, 180°C, fan 160°C. In a food processor, whizz the bread to coarse crumbs, and then tip on to a baking tray. Drizzle over a little olive oil and season well. Bake until crisp, and then set aside to cool completely.

Meanwhile, heat a little oil in a frying pan and cook the bacon over a medium heat until crisp. Drain well on kitchen paper and leave to cool.

Combine all the ingredients in a food processor and whizz to fine crumbs. Serve as a crunchy topping over pasta, soup, risotto and salad.
