A Baked Cheesecake is perfect for Christmas. I try to make a different one most years!
Crush the Ginger nuts to make fine crumbs and mix with the melted butter
Press the biscuit crumbs into the base of a 9 inch round loose bottom pan.
Bake at 175 degrees Celsius for 10 minutes
Meanwhile beat together the cream cheese, eggs, Baileys, Double Cream, plain flour and the icing sugar until thick and creamy. About 5 minutes.
Pour over the biscuit base and bake on the middle shelf of the oven for approximately 45 minutes until firm around the edges but still slightly wobbly in the middle.
Remove from the oven and allow to cool.
Chill for several hours preferably overnight.
