Satisfy your sweet tooth with this quick and simple dessert. Baked bananas are served with an apricot and honey purée, topped with a scoop of vanilla ice cream. If you don't like apricots, try nectarines instead.

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Cut 4 rectangles of foil, 25 x 30cm each.
  2. Split each banana in half lengthways and set each one on a piece of foil. Drain the apricots and tip into a food processor. Add the honey and process for a few seconds to make a smooth purée.
  3. Spoon the purée over the bananas and fold over the foil, twisting the ends to make sealed parcels. Arrange on a baking tray and bake for 10 mins.
  4. Carefully open the foil parcels. Serve with scoops of ice cream.
