Preheat the oven gas mark 6, 200°C. Lightly brush 4 holes of a large muffin tin with vegetable oil.
Arrange a slice of ham in each hole. Trim the ham until even, so its still above the tin.
1 by 1, crack the egg into a clear bowl and slowly tip the egg in the ham. Cook for about 10-12 mins. Remove the tray from the oven and remove each using a tablespoon/palette knife.
For a meat-free option, use Portabello mushrooms instead of the ham.
