Tired of toast every morning for breakfast? This easy, delicious baked Florida grapefruit with oat granola will brighten up a cold, wintry day. It also makes a great – and impressive – dessert to be enjoyed by all the family. If you’ve never baked grapefruit before, you’re in for a treat. See method

  • 1 Florida pink grapefruit, cut in half
  • 30g walnuts, finely chopped
  • 2 tbsp porridge oats
  • 2 tbsp plain flour
  • 1 tbsp honey
  • 1 tbsp butter, melted
  • pinch of cinnamon
  • 2-3 drops almond extract
  • couple of spoonfuls Greek yogurt

  1. Preheat oven to gas 2, 150°C, 130°C fan. Place the Florida grapefruit halves, cut side up, on a baking sheet.
  2. In a bowl combine the walnuts, porridge oats, flour, honey, butter, cinnamon, almond extract and a pinch of salt.
  3. Divide granola topping evenly between the two Florida grapefruit halves.
  4. Bake for 20 minutes.
  5. Top each with a spoonful of Greek yogurt and enjoy.

Tip: The granola will be slightly crunchy on top, but will remain soft underneath.
