Preheat the oven to gas 6, 200C, 180C fan. Toss potatoes with 1tbsp olive oil and place in a roasting tin. Season with salt and pepper and cook for 20 minutes.

Remove the potatoes from the oven stir in the chopped tomatoes, garlic and thyme.

Top the lamb steaks with the crumbled feta cheese and lay on top of the potatoes. Bake for another 15 minutes, or until the potatoes are crisp and golden and the lamb is cooked through.
