Pre-heat the oven to 200°C.
Prick the potatoes a few times with a fork and rub all over with the olive oil and season. Bake for 60-75 minutes until they give a little when squeezed. Remove and cut in half lengthwise.
Top each half evenly with a mixture of the bacon and cheese. Return to the oven for 5 minutes until the bacon is cooked and the cheese has melted. Remove and serve immediately.
