This recipe was given to me by a Spanish lady. I like it because it is so simple to make and taste good.
Marinade the tuna steaks in chopped garlic, chilli flakes. balsamic vinegar, sherry and brown sugar for 30 minutes.
Remove the tuna from the marinade. Dry with kitchen towel.
Heat the olive oil in a large heavy base frying pan. Fry tuna steaks 10 minutes on each side.
Add in the stockpot and mushrooms. Sizzle for 2 minutes. Then add in the marinade and sizzle into a thick syrupy glaze. Add in chopped basil ad dill. Season to taste.
Serve hot with mashed potatoes. Garnish with roast cherry vine tomatoes and springs of dill
Dried shiitake mushrooms give a more intense flavour than the fresh mushrooms.
