Preheat the oven to 180°C/160°fan/350°F/gas 4. Grease and line a 1½ lb loaf tin.
Mix the flour, baking powder, salt, cinnamon and chopped apricots in a bowl. In a separate bowl, add the apricot yogurt, egg, vanilla extract and mashed bananas and mix with a fork or balloon whisk. Add the wet ingredients to the dry ingredients and combine well.
Tip the batter into the prepared loaf tin and bake in the oven for 30-40 minutes or until a skewer or knife comes out clean. Cool in the tin for a few minutes, then place on a wire tray to cool completely.
