Preheat oven to Gas 4, 180°C, fan 160°C.
Place dates into a large, heatproof bowl and cover with boiling water. Set aside and leave for 20 minutes, until the dates are soft. While the dates are soaking, grease and line a large cake tin. A 23cm (9in) square tin or two 2lb loaf tins should be sufficient.
In a separate mixing bowl, mash the bananas.
Whisk in the beaten eggs.
Sieve together the flour, baking powder and bicarbonate of soda. Add to the mixing bowl along with the oats and wheatgerm and carefully mix together until well combined.
Once they have softened, place the dates, soaking water and oil into a food processor and blend until smooth. Then add to the other ingredients and mix together.
Pour mixture into the prepared cake tin and place in the oven. Bake for 1¾ hours.
