Pre heat oven to 180c degrees or gas mark 4
Beat the sugar and butter/marg together until creamy.
Seperate the eggs, and add the yolk to the mixture, keep the whites in another bowl for later. blend again.
Mash bananas, and add to the sugar, butter and eggs. Blend untill thouroughly mixed together and fluffy in texture.
Whisk egg whites together until white and fluffy.
Gently fold flour into the blended mixture, and then fold in the egg white.
Spoon mixture into muffin cases and bake in oven for 20 minutes.
To add extra air and lightness to the muffins a hand mixer can be used.
