Preheat the oven to 180°C. Mix the butter and sugar together in a mixing bowl, then add the egg and mix until light and fluffy in texture.
Mash up the bananas in another bowl and then add the baking soda and leave for 2 mins.
Mix together the butter/sugar mixture and the the banana/baking soda mixture. Add in the flour and the almonds and mix everything together so it combines well.
Spoon the mixture onto a baking sheet into rounded lumps, or use a cookie tray. Bake for 11-13 minutes/until the cookies are golden brown in colour.
Carefully remove from the oven and leave to cool. When cooled sufficiently - eat!
Chocolate chips can also be added at step 3 if desired.
