I have been using this recipe for years to make cakes for special occasions this recipe was used for when i made my sons christening and 1st birthday cake. My sons first cake for christmas and many other cakes. The sponge is dense enough to hold 3 tiers and probably more but thats as high as i have gone. It holds fondant icing well and tastes great when filled with buttercream icing and Strawberry jam. Its great on a summers day after a BBQ.
Heat the oven at 170c. Mix together the Unsalted Butter and the Caster sugar until white and fluffy.
Add the eggs one at a time mixing as you do so. This will make the mixture look slimy but this is ok.
add the vanilla essence.
Add the plain flour then the self raising flour and mix together.
add the 2 teaspoons of milk to the mixture and mix this all together
To make the Buttercream. Mix together the 75grams on unsalted butter and 175grams of icing sugar.
