this is my favourite recipe because its quick and easy and dilicious and you have all your veg so its healthy my kids love it
wash the rice and sieve, soak in cold water for 20 minutes then drain.
heat the oil in a large pan and fry the onion for a few minutes over a medium heat until soften.
add the rice to the pan and fry for 10 minutes stirringto prevent rice from sticking.stir in crushed garlic.
pour in the water vegetable stock and stir bring to boil and lower the heat cover and simmer for 15 minutes.
sprincle the peppers and grated carrot cover tightly asnd stean over lower heat until the rice is tender then mix with fork . pile in serving dish andgarnish with coriender leaves
you can choose whatever vegetable you like.it taste good with corn
