Pre heat the oven to 190°C.
Peel and chop the potatoes, place into a large pan of boiling salted water. Cook the potatoes until soft and starting to break apart. Remove from the heat and drain.
Heat a drizzle of oil in a frying pan, fry the chicken breasts until fully cooked, remove and set to one side. Cook the bacon in the same pan. Place the chicken into an oven proof dish and place the two rashers of bacon on top of each breast. Cover the bacon with the grated cheese and place in the pre heated oven for 5 minutes.
Meanwhile mash the potatoes adding the milk and butter and seasoning well. Once the chicken is cooked remove from the oven and spread the BBQ sauce on top of the cheese. Serve with the mashed potato and a vegetable of your choice.
Tip: Want it extra BBQ-y? Add some BBQ sauce to the bacon before adding the cheese.
