Please your vegetarian guests and make the most of nutritious cauliflower with this easy and delicious barbecue side. Roasting cauliflower really brings out the gorgeous, nutty flavour and is an exciting, unusual way to prepare this versatile vegetable.
Remove the outer leaves of the cauliflower. Place in a large pan, cover with boiling water and a little seasoning, and then simmer for about 7-10 minutes, until almost cooked but still firm. Drain.
Combine the garlic, ginger, smoked paprika, lemon juice and yogurt with a little seasoning. Use 1 tsp of the yogurt mixture to rub over the cauliflower, setting the rest aside.
Wrap the cauliflower in tin foil and cook on a preheated BBQ for 10 minutes, rotating until cooked through. Serve with the reserved yogurt and garnish with the chopped parsley.
