Fry 1 onion, sliced, in calorie controlled cooking spray for 5 minutes, then add 2 cloves garlic, crushed, 175g (6oz) leeks, sliced, 100g (3½oz) carrots, peeled and diced, and 2 sticks celery, diced. Cover and cook, stirring, for 15 minutes.
Add 2 x 350g jars Weight Watchers Roasted Garlic Pasta Sauce and 400g (14oz) extra lean minced beef. Simmer, covered, for 20 minutes. Uncover, add 250g (9oz) broccoli florets and cook for 10 minutes. Season. Preheat the oven to gas mark 4/180°C/fan oven 160°C. Spoon a third of the mince into a 2 litre (3½ pint) ovenproof dish and top with 5 sheets dried lasagne. Top with a third more mince, 5 more lasagne sheets and the remaining mince.
Beat 100g (3½oz) Weight Watchers Reduced Fat Crème Fraîche with 100g (3½oz) ricotta cheese and 15g (½oz) Parmesan, grated. Spoon over the lasagne. Bake for 40–45 minutes. Serve with a green salad.
