wash and slice the leeks.
peel and chop the swede
peel and slice the carrots
trim any fat off the beef and cut into 1“ cubes
Put all the ingredients into a large pan and bring to the boil.
Skim off any fat from the top of the pan.
Transfer to a pre-heated oven (gas mark 5, electric 190 or fan 170) and cook for 1 1/2 hours
Lovely with mashed potatoes or, if you are being really naughty, dumplings.
