Heat the oil in a very large deep frying pan with well fitting lid, fry the onions, smoked sausage & steak for 5 minutes.
Add the tomatoes and rice and cook for 5 minutes.
Add the rest of the ingredients up to the sliced red & green pepper and simmer for 12 minutes.
Add the remaining ingredients except the lime and chopped parsley, and cook for a further 5 minutes, covered, until the rice is cooked but not mushy.
Place Jambalaya in a warm serving dish, sprinkle with parsley and garnish with the slices of lime.
Serve with crusty buttered bread if wished.
Don't over cook the rice.. Seafood can be replaced with chicken and thinly sliced honey roast ham.
