Stir fry the minced beef, onion, courgettes and red pepper for 6-8 mins.
Add the tomatoes, Passatta and seasoning and cook for 12-15 mins, stirring often.
Preheat oven to 200 degrees C or 180 degrees C for a fan oven. Oil a lasagne dish and spoon in half of the mince mixture, top with half of the lasagne sheets. Spread half of the yoghurt mixture and top with the remaining mince mixture. Finish off with the remainder of the lasagne sheets. Top with the remainder of the yoghurt mixture and Parmesan cheese.
Bake for about 30 mins until the top is golden. Remove from oven and serve immediately.
